Apple & Carrot Hash Browns
Serves 2
1 medium green apple – unpeeled and cored
2 medium carrots – peeled
2 eggs
1 tsp honey
Grate the apple and carrots.
Whisk the egg with the honey and combine with the grated apple and carrots.
Heat a little oil on medium in a frying pan.
Add one heaped tablespoon of the mixture into the pan and gently flatten with a spatula.
Fry on medium for about 4-5 minutes each side.
Serve warm with a drizzle of honey or your favourite sweet topping.
