Almond Milk Smoothie

Makes just over 1 liter/2 pints of almond milk

5 cups of almond meal

7 cups of water

Smoothie for 1 person

1 cup almond milk

1/2 ripe banana

2 or 3 ice cubes

1/2 tsp vanilla essence

4 large strawberries

2 tsp honey

Making almond milk is almost like milking a cow. Once you have processed the almond meal and water for three minutes in a food processor you strain the liquid through a thick kitchen cloth and keep squeezing the remaining pulp for any residual milk.

Refrigerate immediately and keep for up to three days.

Shake the bottle each time before use to mix through any sediment.

To make the smoothie blend some ice, 1/2 banana, 4 large strawberries and honey to taste.
