White Fish Salad

White Fish Salad

1 kg/2 lb filleted smoked white fish (see smoking instructions below)

⅔ cup mayonnaise – (see condiment sections)

½ cup celery - minced

2 tbsp fresh dill – minced

2 tbsp fresh chives – minced

¼ cup red onion - minced

juice from 1 lemon

salt and pepper to taste

Ensure the fillets are completely bone free before placing into a mixing bowl.

Add the rest of the ingredients and thoroughly mix.

Keep refrigerated in an airtight container.

Smoked Fish

1 kg/2 lb filleted smoked white fish

2 cups water

¼ cup honey

1 tbsp salt

Place the fish into a deep dish and cover with the water, mixed with honey and salt overnight or for at least 2 hours.

Remove from the brine and pat dry.

I use this stove top smoker, which is very easy to use.
