Spiced Banana & Orange Bread
Makes 1 loaf
Pre-heat oven to 150°C/300°F
Line a loaf tin with baking paper.
3 small bananas (or 2 large ones)
1 Tbs orange rind – grated
4 merdjool dates - chopped
4 eggs
½ cup cashew nut butter
¼ cup coconut cream
1 Tbs coconut oil
½ cup coconut flour
1 tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp clove
¼ tsp salt
Combine the first seven ingredients and process in a food processor until smooth.
Then add the rest of the ingredients and mix well.
Pour into the lined baking tin and bake for 1 hour.
Leave to cool and refrigerate. This bread tastes great toasted the next day.
