Burgers Without A Recipe

Occasionally - well okay frequently - I look into my fridge at the end of the day having totally forgotten to organised dinner, and there are some lonely grocery items looking at me like abandoned orphans. I have some minced organic beef in the freezer, one carrot, one tomato hidden in the back, an avocado that's about to go beyond the used by date, a carton of eggs...no my mistake there is only one egg left in the carton...and some 'shrooms.

I put my genius on and come up with this dish, which even if I say so myself, is genius! And, I'm thinking should win an award...

I used about 370g/18 oz mince and the one carrot (grated) and mixed the lot with the egg and some salt and pepper. Rolled into patties and then I fried them 7 minutes on each side (made 8 small patties).

The tomato I halved and placed onto a baking tray, sprinkled with olive oil, thyme, salt and pepper and grilled until it looked like the picture, maybe 20 minutes.

The avocado I smashed up with a bit of lemon, salt and pepper.

The mushrooms (1 punnet) I fried with a little onion and garlic until soft, maybe 15 minutes and then placed into a food processor with the sharp blade and added 1 tablespoon of coconut cream and added salt and pepper to taste.
