4 green apples
3 Tbs currents
3 Tbs chopped pecans
1 Tbs coconut oil/or butter
¼ cup honey
juice from half a lemon
¼ cup slivered almonds
¾ cup boiling water
Cut the top quarter of the apples and set aside.
Remove the core with a pairing knife by cutting out the stem area and then using a small spoon dig out the seeds.
Combine the currents, pecans, coconut oil, honey and lemon juice. Stuff each apple with the mixture. Sprinkle with the slivered almonds and place the tops back onto the apples.
Place the apples in a 8-inch-by-8-inch baking pan and fill with the boiling water.
Bake for 30-40 minutes or until the apples are tender but not mushy.
Serve with coconut cream or homemade ice cream.
